Avocado corn salad


 

All you need ::


1 pound cherry tomatoes, cut into halves or quarters


3 stalks of corn, cooked, peeled and diced


2 avocados, peel and slice


1/2 red onion (medium), thinly sliced


1/4 cup chopped cilantro (1/2 small bunch)


2 tablespoons of extra virgin olive oil


2 to 3 tablespoons lemon juice, from 1 to 2 lemons


2 garlic cloves, crushed or finely minced


1 teaspoon sea salt or 3/4 teaspoon table salt


1/8 teaspoon black pepper


*how to make it ::


In a large salad bowl, mix tomato slices, corn kernels, avocado slices, and red onion slices.

1/4 cup chopped cilantro and press in 2 garlic cloves.

Drizzle with 2 tablespoons of extra virgin olive oil, and 2-3 tablespoons of lemon juice (add to taste).


Add 1 teaspoon sea salt and 1/8 teaspoon black pepper, or season to taste.

Gently stir the salad until it blends and its feet.
