Cheesy Baked Chicken and Peppers Recipe


Ingredients:


4 boneless, skinless chicken breasts

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

2 cloves of garlic, chopped

1 teaspoon paprika

1 teaspoon dried oregano

Salt and black pepper, to taste

1 cup shredded cheddar cheese

1/2 cup grated parmesan cheese

3 tablespoons olive oil

Fresh parsley, chopped, for garnish

Preparation:


Preheat Oven and Prepare Chicken: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Meanwhile, season the chicken breasts with salt, pepper, paprika, and dried oregano.

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced bell peppers and chopped garlic, sautéing until the peppers are tender and slightly browned.

Brown Chicken: In the same skillet, add the seasoned chicken breasts and cook each side for about 3-4 minutes, just to brown them. You don’t need to cook them through at this point.

Assemble the Dish: Transfer the browned chicken and sautéed peppers to a baking dish. Arrange the peppers around and on top of the chicken breasts.

Add Cheese: Sprinkle the shredded cheddar and grated parmesan cheeses evenly over the chicken and peppers.

Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is thoroughly cooked (reaching an internal temperature of 165 degrees Fahrenheit) and the cheese is melted and bubbly.

Garnish and Serve: Garnish the baked chicken and peppers with freshly chopped parsley before serving.
