White Chicken Enchiladas! 🌟🧀🌶️🐔


10-12 flour tortillas

2 cups shredded cooked chicken

2 cups shredded Monterey Jack cheese

1/4 cup butter

1/4 cup all-purpose flour

2 cups chicken broth

1 cup sour cream

1 can (4 oz.) diced green chilies

1/2 tsp. garlic powder

Salt and pepper, to taste


1️⃣ Preheat oven to 350°F (175°C).

2️⃣ In a mixing bowl, combine the shredded chicken and 1 cup of the Monterey Jack cheese. Mix well.

3️⃣ Fill each flour tortilla with a scoop of the chicken and cheese mixture. Roll the tortillas and place them seam-side down in a baking dish.

4️⃣ In a saucepan, melt the butter over medium heat. Whisk in the flour until smooth. Gradually add the chicken broth, whisking constantly, until the mixture is smooth and thickened.

5️⃣ Remove the saucepan from heat and stir in the sour cream, diced green chilies, garlic powder, salt, and pepper.

6️⃣ Pour the sauce over the enchiladas in the baking dish, making sure to cover each enchilada with sauce.

7️⃣ Sprinkle the remaining Monterey Jack cheese over the top of the enchiladas.

8️⃣ Bake for 20-25 minutes or until the cheese is melted and bubbly.

9️⃣ Let the enchiladas cool for a few minutes before serving.
