Light fruit cake



+For daily fruit cake:
°400g mixed dried fruit see note
°125g butter at room temperature See Note
°3 large eggs
°60 ml milk (4 tbsp)
°1 tbsp jam (no flavor)
°125g dark or light soft brown sugar - see note
°250g self-breeding flour see note
°2 teaspoons mixed seasoning (10 ml)


Preheat oven to 170 ° C/150 ° C fan/gas mark 3/325 ° F
Either grease the tin with butter or place the lining inside
Fruit weight in bowl for later
For daily fruit cake:
Put all the ingredients except fruit in a large bowl (or blender/food processor).
125g butter at room temperature, 3 large eggs, 60ml milk, 1 tbsp round (no flavor), 125g soft brown sugar, 250g self-breeding flour, 2 tsp mixed spices
Beat well together, but don't overdo it.
Scrape the mixture and mix again
Add the dried fruit and stir by hand.
You don't want to break up the fruit.
400g mixed dried fruit
Carefully place the mixture in the tin/lining and use a knife to cause slight depression in the top of the mixture. That means you'll have a lower shirt.
Cook for 1 hour and 15 minutes, tested using a toothpick. When it comes out clean, the cake is cleaned. If not, return to the oven for 10 minutes and repeat. You may need up to an hour 1 45 minutes
Remove the cake from the oven and leave in the tin for 10 minutes before turning on a wire rack to cool
Store in an airtight box when cold. (You can leave the lining on until the cake is served)
