Turtle 🐢 Watermelon Fruit Salad
It’s time to enjoy summer at its finest with this Turtle Watermelon Fruit Salad. Using fresh fruit, you won’t be able to get enough of the delicious taste!
Servings 8 Cups
Ingredients:
1 small seedless watermelon sliced in half
1 large cantaloup sliced in half and seeds scooped
1 pineapple
1 cup green grapes
1 cup red grapes
1 ½ cups strawberries
1 ½ cups blueberries
Instructions:
Using a melon baller, create cantaloupe melon balls using both halves of the cantaloupe. You can also cut the melon into 1-inch cubes instead of using a melon baller. Set the melon balls aside and discard the cantaloupe rind.
Slice your pineapple and cut it into ½ inch pieces. I like to cut pineapple with the top still on for something dry to hold onto. Set the pineapple pieces aside.
Using a melon baller or knife, make watermelon balls or cubes using both halves of the watermelon and place them into a large bowl. Using a spoon or ice cream scoop, scoop out the remaining watermelon to create a smooth surface inside both watermelon halves.
Slice your strawberries lengthwise and discard the tops. Then place strawberry halves, blueberries, grapes, cantaloupe, and pineapple into the large bowl with the watermelon. Mix them up until each fruit is equally distributed throughout the bowl.
Cut a flat spot in the bottom of one of your watermelon halves so that it sits like a bowl, I like to use the half that is discolored from growing because you’ll want the best side to become the turtle. Fill this half of the watermelon with your fruit salad. You’ll have extra fruit, this is ok.
With the remaining watermelon half, cut a 2-inch rim around the bottom and then cut that rim into 6 equal-sized rectangles. Using a small knife or sharp scissors, cut 4 half ovals for the feet, 1 long teardrop shape for the head, and 1 small diamond shape for the tail.
Place a toothpick pointed upward at the base of each leg, the tail, and the head.
With a spoon or your melon baller, scrape 6-sided shapes down the turtle shell and a ring around the outside. Then connect the corners of the shapes to the outside ring.
Using the toothpicks, place the 4 legs, head, and tail into the underside of the turtle shell. Flip the turtle over onto the fruit salad. Cut a blueberry in half and place the halves on the turtle head for eyes.
Cover and chill in your refrigerator for at least 1 hour before serving.
