✨Homemade Caramels 🍬
Ingredients:
1 cup heavy cream
5 tablespoons unsalted butter, cut into pieces
1 teaspoon fine sea salt
1 1/2 cups sugar
1/4 cup light corn syrup
1/4 cup water
1/2 teaspoon vanilla extract
Directions:
Line an 8-inch square baking dish with parchment paper, leaving an overhang on two sides.
In a small saucepan, combine heavy cream, butter, and sea salt. Melt over low heat, then set aside.
In a medium heavy-bottomed saucepan, combine sugar, corn syrup, and water. Stir over medium heat until the sugar is dissolved.
Increase heat to medium-high and bring to a boil, without stirring, until the mixture reaches a golden caramel color, about 320°F on a candy thermometer.
Remove from heat and carefully stir in the cream mixture (it will bubble up) and vanilla. Return to heat and simmer until it reaches 248°F (firm ball stage), stirring occasionally.
Pour the caramel into the prepared dish. Let cool for a few hours or until firm.
Using the parchment overhang, lift the caramel out of the dish. Cut into squares with a greased knife.
Wrap individual caramels in wax paper for storage.
