Quick and Easy Strawberry Jam


2 cups fresh strawberries, hulled and halved

1 cup granulated sugar

2 tablespoons lemon juice


In a heavy-bottomed saucepan, combine strawberries, sugar, and lemon juice. Stir over low heat until the sugar is completely dissolved.

Increase heat to high and bring the mixture to a boil. Use a potato masher to lightly mash the strawberries as they cook.

Boil the mixture, stirring often, until it reaches 220°F (104°C) on a candy thermometer, about 10-15 minutes.

Remove the jam from heat and let cool slightly. If you prefer a smoother jam, use an immersion blender to puree the jam to your desired consistency.

Transfer the jam to sterilized jars and seal. Allow to cool to room temperature, then refrigerate until set.
